Matthew Dorich, of Padstowe fame, spent many years working under Rick Stein in Cornwall and has developed a huge knowledge of seafood & fish. The Essential Fish course is designed as an introduction to using fish, including learning to fillet, skin and pin-bone as well as learning how to spot if a fish is fresh or not.
A number of recipes will be taught which cover many of the basic techniques. We are sure that after a day with Matthew, you will become a loyal customer at your local fishmongers!
The Advanced Fish Course is also taught by Matthew Dorich. This course is for those who already cook with a lot of fish, but are unsure about the more difficult sauces, as well as learning a bit more about how best to use unusual species. We will learn a few recipes that incorporate more advanced techniques as well as working with shellfish and molluscs.
Mike Robinson:
Mike is a regular presenter and guest chef on UKTV Food's daily live show Great Food Live, and also presents numerous mini series for UKTV Food. He is also a regular chef presenter on BBC2's Saturday Kitchen; he was in fact the first chef to launch the programme.
Since 2001, Mike has presented five series for UKTV Food - Chalet Slaves filmed in Chamonix in the French Alps and Safari Chef filmed in Kenya. He was involved in the making of four series: 'Heaven's Kitchen' , 'Heaven's Garden', 'Heaven's Kitchen Cookbook' and "Heavens Kitchen at Large"- all showing on UKTV (Sky) and continually repeated. He also has a book - Wild Flavours - published in September 2005.
As well as presenting, Mike often does regular cooking demonstrations at a variety of exhibitions throughout the UK including The Good Food Show, The Ideal Home Show and the Chelsea Flower Show. He has also held demonstrations at several gourmet food festivals in South Africa.
He writes a popular monthly article on cooking in "The Field" magazine.
Mike has always been an outdoors man since a very early age and his greatest passion is cooking game and wild food generally.
- All courses will start at 10am and go on until approx 4.30pm.
- Mike Robinson will be teaching the Essential and Advanced Game courses. The others courses will be taken by other members of the Pot Kiln team, trained by Mike Robinson in accordance with their specialties.
- The dishes will vary according to season, as Mike Robinson believes in only using what is around at the right time, so there is no set dish for each course.
- Some courses require going out into the field, such as the Wild Mushroom course, so please wear appropriate clothing.
- Lunch is included on all courses.
